Do i have to stay with stock size wheels?

My stock wheels on my tundra are 16 inches

Does that meen if i want after market rims for my truck i need to buy 16 inch ones or can i go bigger without lifting the truck?

Also will it screw up my speedometer if i go bigger?

bigger!

you will just have less tire

if you add bigger tires, the speedo may be off a little

may say 65 when you're going 70

Bigger rims will not mess with the spedo. The OD of the tire is where things get messed up. The spedo is off with a tire change because a 31" tire takes less distance than a 33" to make a complete rotation
