For these tire sizes, even the stock wheels are okay (+60 offset or + 50 for Rock Warrior). Lower offset simply means that it will be pushed out of the wheel well more.
Offset becomes more problematic if you want to fit larger tires. The safe offset for larger tires is around 35mm. Anything lower, you risk having to modify the body mount. Anything higher, you risk rubbing the skid plate or uca.
I got 18 mm offset with stock tires and it sticks out roughly about 1 inch beyond the fender. I like to get Bushwacker pocket style fender flares, so I wanted them to stick out more than the stockers. If I were not interested in fender flares, I would go with Goliath (safe offset in case i want to go with a larger tire and I really dig their looks).
