Depending on who's trailer you use, the GVW of the U-Haul car carrier is 2000 lbs. I towed my 2001 Ford Escape that weighed 4600 lbs. No problems. I didn't have anything in the bed. I would assume that the Volvo weighs about the same as the Escape, probably less. I think you'll be okay loading the bike. Do you have the TRD package?

You should have no issues. The only issue is the bike weight and trailer tounge weight being more than the load capacity of the truck. You might want to check with the U-haul place and ask how much tounge weight they think the trailer will have with your vehicle loaded, just to be safe. Those tandem axle U-haul car transports don't have much tounge weight so you should be good.

You be fine, I hauled our race car, lighter than the Volvvo, but had 10 wheels moutned with tires and all my tools, and two adults in the truck, 800 miles round trip, no issues.

Just make sure you get appropriate tongue weight, and by that I mean don't try to compensate for the bike weight by reducing trailer tongue weight. IMHO that would get you in more potential (trailer sway and stopping) problems than giving your springs a good workout.
