Give us an update on how that smoker works. That is the same one I was looking at. I like the fact that you can grill on that one as well when needed however I have a gas grill for quick burgers and dogs when needed.

it works too good. disaster struck last night. i smoked it TOO much. the ribs tasted like smoked salmon. the dog ended up eating it all. next time i will only add a few wood chunks in the beginning, and then no more.

You put your wood and coal in the little burner box on the side right?? It kept the heat in the 220 to 250 range alright??

yes i did everything correctly as far as i know. its just that it smoked way TOO much. i modified the smoker before i started. the two main mods are recessing the exhaust down to the level of the grates (helps the smoke float around more before getting sucked out and maintains a more even temp) also i added a little shelf like thing that seperates the firebox from the cook box, which points the smoke downward under the meat. i should have only added wood in the beginning and no more, but i kept adding wood for 2 hours.

So here i pics i just took. I should have done it yesterday when it was brand new and clean, but oh well. As you can see i lowered the exhaust shaft a couple inches. I used aluminum flashing. And you can also see the shelf i added to redirect smoke underneath the cooking grates and to keep direct heat waves from hitting the food closest to the firebox. I used the same aluminum flashing for this. I then spray painted all the things i added with high temperature resistant rust proof spray paint made for grills. The piece of wood you see with the hole is what i use to hold the temperature probe suspended in the air and keep it off the grates.

Weber rules at my house! Prefer Kingsford self-lighting. I saved all the small stuff(1"-2" dia) from the alders I took down last year. 3 or 4 sticks go onto the coals to 'finish'. Lid: tight, Ventspen, 5 minutes. yum Best roadkill on the Kitsap Penninsula!!
