Thanks Tampa - turns out a 5" drop did the trick. I wanted to make the trailer level after it was hooked to the truck and in this case the trailer has 4 wheels, and it leveled off after about a 2" drop from the truck bed.

I did have to shop a bit for a 2" ball rated for 8,000 lbs. Uhaul happened to have one on sale for like 9 bucks.
