I want the meaty-tire look so I think I'm going to have to stick with the 18" rims. Or do you guys think that with a 3" front and 1" back leveling kit I'd be able to fit 35" tires on 20" rims???

If you put a lift kit on, I think you'd be fine. The problem you'll run into is that you won't be able to fit that tire on anything less than a 10" wide wheel (safely) and 20x10"s is going to limit your availability even further. That, and the price of tires goes up exponentially as you get larger (which is a marketing cost, not an actual materials or delivery costs

)
If you get a 3" lift and custom offset you should be able to run 35" tires without rubbing.
